Stuart’s Hash Brown Casserole
½ stick butter cut in small pieces
16 ozs frozen hash brown potatoes
1 tsp salt
½ lb pork sausage
Black pepper to taste
Several dashes of Tabasco sauce
½ cup chopped tomato (optional)
2 Tbsps chopped pepper
2 Tbsps minced green onion
3 Tbsps Ranch dressing or Paul Newman’s Caesar Salad
1 ¼ cup milk
1 cup grated extra sharp cheddar cheese
In small skillet brown sausage and drain. Spray non-stick cooking spray in 8 by 11.5 baking dish. Spread potatoes in bottom of baking dish place butter on top and bake in 350 oven until potatoes are thawed and browned. Drizzle dressing over potatoes. Spread sausage and onions over potatoes. Spread cheese over sausage.
In mixing bowl Mix eggs, then add milk, tomatoes, peppers, onion, salt, black pepper, and Tabasco sauce. Pour mixture over potatoes, sausage, cheese and bake (in middle of oven) at 350 oven 30 to 35 minutes. Golden on top. Serves 6 to 8.
